About the Recipe
The cream of soup using Pioppinos as the mushroom is an absolute delight to eat.

Ingredients
1 Large Punnet Pioppinos mushrooms roughly chopped
4 slices bacon, sliced into pieces
2 cups chicken stock
1 onion, roughly chopped
1 tbsp fresh or dried thyme leaves.
4 tbsp butter
4 tbsp flour
1 cup full cream milk
1 cup cream
Salt and pepper to taste
Preparation
Step 1Â
Place bacon and a small portion of the mushrooms into a pot and cook until crisp. Remove and set aside on paper towels.
Step 2Â
Add Stock, remaining mushrooms and thyme into pot. Bring to boil then simmer for 15 minutes.
Step 3Â
With immersion or standard blender, puree contents of pot. Place contents aside and wipe clean pot.
Step 4Â
Add butter and flour to pot and cook over low-medium heat without darkening or scorching contents until well mixed and warm/hot.
Step 5Â
Slowly whisk in Milk and Cream.
Step 6Â
Slowly whisk in Puree
Step 7
Place in bowls, top with bacon and mushrooms
