About the Recipe

Lion's Mane Crab Cakes was the first recipe I tried with these bizarre mushrooms. I mean, how do you even attempt to eat these things?! The flavour, in my objective opinion, is delicious and a great way to try out the mushroom with very little going wrong! I also keep most of these ingredients in our kitchen (except mayo for some reason) but feel free to swap it out as you see fit - even google hamburger recipes and steal some ideas from there!

Ingredients

  • 1 Large Punnet of Fresh Lion's Mane Mushroom (or 40g dehydrated).

  • 1 Egg

  • 1 Onion finely diced

  • 1/3 Cup Panko Breadcrumbs

  • 1/3 Cup Plain Flour

  • 2 tablespoons of Mayonnaise

  • 1 teaspoon Worcestershire sauce'

  • 1 teaspoon Liquid Smoke (if you can't find, double Worcestershire sauce)

  • 1 tablespoon of parsley (Fresh ideal but dried will be just fine!)

  • 1/2 teaspoon paprika

  • 1/2 teaspoon turmeric (option

  • Salt, Pepper & Chilli flakes to Taste

  • Oil for Frying


Preparation

Step 1

Prep the Lion's Mane. Cut away any substrate at the base of the mushroom and begin peeling the mushroom apart by hand creating small 'crab meat' sized pieces. If using dehydrated lions mane, I recommend allowing to sit and dry after dehydration before beginning.


Step 2

"Dry Fry" (no oil) your prepped Lion's Mane in a pan on a medium heat. This is in an effort to remove excess water from the mushroom. Using a spatula, continue to press out moisture for around 5 minutes, it is okay but not necessary to brown the mushroom here. This'll prevent the mushroom from being too chewy.


Step 3

Add your mushrooms with all ingredients (minus your oil) to a mixing bowl and combine. You should not have too much excess liquid in the bottom, if this occurs add a little more flour.


Step 4

Roll the mixture into flat-ish balls and set aside for 15 minutes.


Step 5

Add oil to a pan. Medium heat. Place an appropriate amount of rolled flat-ish balls into pan and cook until crispy. You may lose some bits off the side...good for a taste test as you go especially if you're hungry.


Step 6

Serve with your preferred sauce (sweet chilli all the way!) and your favourite sides (we default to mash potato).
