Preparation
Step 1Â
Mix marinade ingredient together with a fork (or some fancy gear).
Step 2
Prep Lion’s Mane by cleaning base and cutting away any excess
substrate.
Step 3Â
Coat Lion’s Mane in Marinade and leave marinating for 30 minutes in fridge (longer is just fine)
Step 4Â
Combine BBQ seasoning ingredients…or take the packet out and eye it off.
Step 5Â
Removed from fridge and Pre-heat oven to 180 degrees
Step 6Â
Place Lion’s Mane on skillet on a medium-high heat. No oil yet.
Step 7Â
Place second skillet on top of Lion’s Mane, pressing down. Slowly press out excess moisture, compressing the Lion’s Mane in a steak-sized piece. Continue for around 5 minutes or until much of the moisture is out and boiled away.
Step 8Â
Sprinkle BBQ seasoning, salt, pepper and chilli onto Lion’s Mane and flip and press again. Add oil if safe (skip if lots of moisture is on skillet)
Step 9Â
Season second side while ensuring underside is crisp. Continue to press moisture out with 2nd pan if necessary.
Step 10Â
Flip back and cook until crisp.
Step 11Â
Removed from heat and place into oven for 10 minutes.
Step 12Â
Remove from oven and enjoy with your favourite sides and sauce.
