Time to have a crack at a Lion's Mane meal that isn't too far from a taco night

Ingredients
1 Large Punnet of Fresh Lion's Mane Mushrooms
8 Wraps
1 Tomato chopped
1 Cup Shredded Cheese
1 Avocado (sliced or mashed)
1/2 Cup Sour Cream
1 Cup Shredded lettuce
1 Sachet of Taco Sauce
1 can (420g) Black beans
1 Onion sliced (white or red)
1 Sachet of Taco Seasoning
Salt, Pepper & Chilli flakes to taste
Oil for Frying
Preparation
Step 1Â
Prep Lion’s Mane by cleaning base and peeling the mushroom apart by hand creating small 'pulled pork’ sized pieces.
Step 2Â
Dry Fry (no oil/butter) the Lion's Mane in a pan on a medium heat, use a spatula to press out moisture for around 5 minutes. Remove from pan and place to the side.
Step 3Â
Add Oil into pan, allow to heat up briefly and add Onions until translucent.
Step 4Â
Add Lions Mane, Black Beans and Taco Seasoning. Cook for 5 minutes. Salt, Pepper and Chilli to taste
Step 5Â
All in separate bowls, place Tomato, Cheese, Avocado, Sour Cream, Lettuce, Taco Sauce and Lion’s Mane/Bean Mixture.
Step 6Â
Heat wraps for 30 secs (optional) in Microwave. Place out for you and the family to build your own wraps. Enjoy.
